How Alchemists Turned Wine Into Fire: The Story of Distillation
Around the year 800 CE, an alchemist named Jabir ibn Hayyan in Baghdad heated wine in a special glass container and captured the steam that rose off it. When that steam cooled back into liquid, it wasn't wine anymore โ it was a much stronger, flammable liquid that could catch fire. He had invented one of alchemy's most important tools: distillation.

What Is Distillation?
Distillation is a way of separating a mixture of liquids by heating it. Different liquids turn into gas (boil) at different temperatures โ this is called their boiling point. Water boils at 212ยฐF (100ยฐC), but alcohol boils at a lower temperature, about 173ยฐF (78ยฐC). If you gently heat a mixture of water and alcohol, the alcohol turns to vapor first. Capture that vapor and let it cool, and it turns back into liquid โ but now it's mostly alcohol, separated from the water.
The Alembic: Alchemy's Key Invention
To distill liquids, alchemists built a special glass device called an alembic, made of two main parts: a bottom flask to hold and heat the liquid, and a curved top piece (called a 'still-head') that catches the rising vapor and guides it down a spout into a separate container. Alembics were used across the Islamic Golden Age, ancient Egypt, and later medieval Europe, to make medicines, perfumes, and purified liquids centuries before modern chemistry existed.
Alchemists distilled far more than wine. They distilled flower petals to make perfume, seawater to get fresh drinking water, and plants to extract medicines โ some of the earliest 'essential oils' were made this way over a thousand years ago.
Distillation in the Modern World
The same basic idea alchemists used is still at work today. Oil refineries distill crude oil into gasoline, diesel, and other fuels, since each one boils at a different temperature. Desalination plants distill ocean water to remove the salt and produce fresh drinking water for cities in dry regions. Even a simple science-class experiment โ boiling salt water and catching the steam on a cold lid โ uses the exact same principle Jabir ibn Hayyan discovered over 1,200 years ago.
