Volcanic Soil Fertility

Near Mount Vesuvius in Italy, farmers grow some of the sweetest tomatoes in the world โ€” in soil made from a volcano that once buried the city of Pompeii in ash. Millions of people choose to live and farm near active volcanoes, even knowing they could erupt again. Why would anyone take that risk? The answer is buried right in the dirt.

What's Actually in Volcanic Ash

When a volcano erupts, it throws out more than smoke. It releases tiny particles of rock called tephra, along with ash rich in phosphorus, potassium, calcium, and magnesium โ€” nutrients plants need to grow strong roots, leaves, and fruit. Regular soil loses these nutrients over time as crops use them up. Volcanic ash acts like a slow-release fertilizer, refilling the soil with fresh minerals every time it falls.

From Bare Rock to Rich Farmland

Fresh lava rock is not fertile at all โ€” it's just hard stone. It takes weathering (rain, wind, and freezing/thawing cycles breaking the rock down) plus decades of plant and microbial activity to turn it into dark, crumbly soil called andisol. Andisols hold water extremely well because of a mineral in them called allophane, which acts like a sponge. This is why volcanic regions often bounce back to lush greenery within just a few decades of an eruption, while the surrounding ash layer is still being farmed generations later.

Real Places, Real Harvests

Indonesia's Java island has some of the highest population densities on Earth, largely because volcanic soil there supports incredibly productive rice paddies. In Central America, coffee grown in the volcanic soils of Guatemala and Costa Rica is prized worldwide for its rich flavor. In Italy, the slopes of Mount Vesuvius grow San Marzano tomatoes, famous for pizza and pasta sauce, thanks to the mineral-rich ground left by the same volcano that destroyed Pompeii in 79 CE.

The Trade-Off

Living on fertile volcanic soil means living near a volcano that could erupt again. Scientists monitor volcanoes like Vesuvius constantly because millions of people now live on its fertile slopes, in what is sometimes called the most dangerous volcano in the world due to how many people live nearby.
